Sweetened Cashew Cream Cheese

Dairy Free Sweetened Cream Cheese that tastes just like the real thing! Good for dips, pancakes and everything else!! I didn't think I missed sweetened cream cheese until I had this.


Here I have it paired with whip cream, strawberry glaze and fruits as a topping for pancakes to which my daughter told me that I ruined her for pancakes now with just maple syrup! I've also used it as a brownie "frosting" then topped with fruit.


Ingredients

1 1/4 Cup Cashews, soaked for approx. 3hrs

5.3oz Dairy Free Vanilla Yogurt

1 1/2 Tablespoon Lemon Juice

4 Tablespoons Coconut Plan Sugar

1/2 Teaspoon Almond Extract (optional but recommended)


Instructions

  1. Place all ingredients in a blender and blend until very smooth and creamy.

  2. Chill for at least an hour before using.

  3. Devour it!

NOTE: You could also use plain yogurt and make this more into a savory cream cheese.
