Bacon Cheddar Ranch Potato Salad

This is one of my go-to potluck recipes! No one will even know it's dairy free - I promise!! This have gotten some rave reviews from family and friends!

Bacon Cheddar Ranch Potato Salad


Ingredients

  • 5 lbs Red Salad Potatoes

  • EVOO for brushing potatoes

  • 1 lb Bacon, cooked and crumbled

  • 1 recipe Dairy Free Ranch Dip (see recipe here on the blog!)

  • 1 bunch Green Onions, sliced thin

  • 8 oz Shredded Dairy Free Cheddar (or Cabot cheddar if you are just lactose free)

  • Coarse Sea Salt & Pepper

Instructions

  1. Preheat to 400°F and place cleaned potatoes on a sheet pan. Use a fork to poke holes in the potatoes and then brush with EVOO and sprinkle with coarse sea salt. Bake until tender (45min - 1hr depending on the size of the potato). Let cool then cut into bite-sized pieces. NOTE: Potatoes can also be cooked in an air fryer instead of the oven in about 40-45min until tender.

  2. Place the bite-sized potatoes in a large bowl.

  3. Mix the remaining ingredients in with the potatoes stirring carefully so as not to break up the potatoes too much. Chill and serve.
