Crockpot Beef Stroganoff

Looking for an easy meal that just tastes like comfort? Crockpot Stroganoff is just the thing for you!


It's creamy and tasty and tender. Serve it over your choice of base - noodles, masked potatoes, or anything else! Our family chose two kinds of no0dles (grain free for me and traditional egg noodles for the family. We cook them in different pots and then folks chose their base!


Crockpot Beef Stroganoff

Ingredients:

4lbs Beef Chuck cut into pieces

1/4 cup Tapioca Starch

1 1/2 teaspoon Seasoning Salt

1 teaspoon Ground Pepper

1 teaspoon Dill

1 teaspoon Dried Minced Onion

1 1/2 teaspoon Garlic Powder (I prefer roasted garlic powder!)

2 cups Broth

1/4 cup Worchestershire Sauce

8oz Sliced Fresh Mushrooms

1 batch of Cashew Cream


Instructions:

1. Cut up meat and place in bowl. Add Tapioca Starch and mix until meat is covered.

2. Spray crockpot with non-stick spray then add coated meat.

3. Add the remainder of the ingredients except cashew cream

4. Cook on low for 4-6hrs (depending on your own crockpot - but cook until tender)

5. While cooking, make cashew cream

6. Gently stir in Cashew Cream.

7. Serve over noodles of choice.


Cashew Cream:

1 1/4 cup Cashew Pieces

3/4 cup Broth

1 1/2 tablespoons Lemon Juice

1/2 teaspoon fine Sea Salt

3/4 teaspoon Apple Cider Vinegar

4 Garlic Cloves, peeled

2 tablespoons Nutritional Yeast

1 teaspoon Pepper

1/2 teaspoon Onion Powder

Blend until smooth in a high speed blender and then refrigerate to marry flavors.
