Lasagna Soup

It's been a chilly & rainy Fall Sunday. Felt like the perfect day to make Soup!! This recipe is a family favorite and one you won't regret trying!


Lasagna Soup is a quick and easy way meal with options...Since my family does NOT need to gluten free, I typically make the soup base and then let them add in their pasta of choice and I either eat mine sans pasta or make my own. This way everyone is happy!


Lasagna Soup Recipe

2lbs Italian Sausage

1/2c Finely diced Onion (or 1/4c freeze dried shallots)

2 Garlic Cloves, Minced

2c Water

1 can (28oz) Crushed Tomatoes

1 jar (26oz) Marinara

1tsp Dried Basil

1/2tsp Dried Oregano

1-20oz package grain free noodles, tortellini, or other pasta of choice (optional)

Kite Hill Ricotta (optional)

Parmesan Cheese (optional)

  1. In a large soup pan, cook the Italian Sausage and Onion over Medium Heat until sausage is cooked through.

  2. Drain the Grease.

  3. Add the Garlic and cook for 30sec.

  4. Add Water, Tomatoes, Marinara, Basil, and Oregano.

  5. Stir well and bring to a boil.

  6. Turn heat down and simmer for 5-10min.

  7. Serve over pasta of choice, adding a dollop of Ricotta, a sprinkle of Parmesan if desired.
