Garlic Confit

The weirdest name for one of the tastiest things!


What the heck is confit? Confit is a term used to describe cooking something slowly, typically, in a fat, and yields something that has both an amazing taste and texture. Here we are cooking garlic cloves in olive oil in order to make an amazing ingredient in other foods, or even a great spread on some grain free bread! And honestly, your grain-eating friends will also love this!


This recipe is just garlic and olive oil, but feel free to get creative with this and add whatever spices you adore! Rosemary, Basil, Red Chilis or other spices are a few of the good options you could try.


I've used this in mashed potatoes, pasta, on flatbreads, in sauces, and the list could go on and on and on!


Does this just look amazingly tasty?!?!


It's easy to make and will store in your refrigerator for a couple of weeks - just make sure to bring it to room temperature before you are going to use it!


Ingredients

Peeled Garlic Cloves

Extra-Virgin Olive Oil

Optional: Rosemary, Red Chilis, or other spices as desired


Instructions

  1. Pre-heat oven to 300*F.

  2. Place your peeled garlic cloves in an oven safe dish.

  3. Cover garlic cloves with olive oil, so that they are completely submerged.

  4. Cook until garlic is golden brown (it will depend on how much garlic and oil you use). I cooked about 2 cups of garlic and it was close to an hour until golden brown.

  5. Remove and let cool. Transfer to an airtight container and store refrigerated.
