Chicken Fettucine Alfredo

Missing some awesome Italian food? Did you think that Fettucine Alfredo was a thing of the past? After being diagnosed with Celiac Disease and needing to go Dairy Free and completely Grain Free as a result, I wasn't sure I would ever eat Fettucine Alfredo again!

But lo and behold! You can have the foods you miss and crave and they can be made so that your digestive system doesn't hate you later! While this recipe takes a little bit of planning and forethought, trust me, you won't regret it!
For real though, Taste Republic makes the best grain free noodles on the market! They are the closest thing to gluten noodles and they are kid approved too! I highly recommend trying them! They are a local brand (to me), and I love supporting smaller businesses.
Ingredients
Cashew Cream:
1 1/2 cups Raw Cashews
Water for Soaking
3/4 cup Chicken or Bone Broth
1 1/2 tablespoons Lemon Juice
1/2 teaspoon Fine Sea Salt
3/4 teaspoon Apple Cider Vinegar
5 Garlic Cloves, Peeled
2 tablespoons Nutritional Yeast
1/2 teaspoon Onion Powder
Pepper to Taste (start with 1/2 teaspoon)
Chicken Fettucine Alfredo:
3 tablespoons Ghee
2 cloves Minced Garlic
1 1/2 cups Chicken or Bone Broth
1 1/2 teaspoons Parsley, dried
1 teaspoon Minced Onion, dried and toasted
1/2 teaspoon Pepper, freshly ground
1 1/2 cups Chicken, cooked and diced
2-9oz packages Taste Republic Fresh Grain Free Pasta, Cooked per package instructions
Place Cashews in a bowl with enough water to cover and soak for 3hrs.
Drain and rinse cashews.
Place all ingredients in a high speed blender and blend until smooth and creamy.
Refrigerate for 1-2hrs to allow flavors to marry.
Heat a large deep sided skillet over medium heat.
Add Ghee and heat until melted then add minced garlic stirring until fragrant (~2min).
Add broth, parsley, onion, pepper and bring to a boil. Reduce heat to low.
Add cashew cream and stir until mixed and creamy.
Add chicken and noodles and stir until mixed well.
Garnish with fresh parsley if desired and serve immediately.
