Bacon & Egg Brunch Bake

Looking for a super easy brunch bake? This is it!! It's got potatoes, eggs, and most important BACON!!




I'm always looking for some quick and easy meals and this one is perfect! It comes together pretty quick and is a good "one pan" meal too if you use a a cast iron skillet. It has ingredients you probably already have on hand too (at least you do if you generally quick grain & dairy free)! You can leave the nutritional yeast out if you don't have any but it adds a nice flavor to the dish so I recommend keeping it in!


Bacon & Egg Brunch Bake

Ingredients:

1 pound Bacon

1 package Fresh Hash Browns (I use Simply Potatoes)

1 Red Pepper, Diced

8 Eggs, large

2 tablespoons Nutritional Yeast

1 tablespoon Chives, dried

1/2 teaspoon Sea Salt

1/2 teaspoon Pepper, ground

1/2 teaspoon Onion Powder

1 teaspoon Garlic Powder

1/4 cup Dairy Free Milk of Choice


Directions:

1. Pre-heat oven to 375F.

2. Cut bacon into small pieces and place in cold cast iron skillet. Heat skillet to medium and cook bacon fully.

3. While the bacon is cooking, add 8 eggs to a bowl with the remainder of the ingredients (other than the diced red pepper). Whisk until mixed well.

4. Remove bacon from the skillet and drain.

5. While the skillet is still hot, add the Hash Browns to the skillet in the remaining bacon renderings.

6. Add the diced red pepper and the bacon on top of the hash browns.

7. Pour egg mixture evenly over the top.

8. Place cast iron skillet in the preheated oven and bake for approx. 25min until cooked through.

9. Remove from oven, let cool and serve.
